Roatan, Bay Islands, Honduras



Just thought I'd start you off with a taste of homemade spinach and ricotta cannelloni smothered in a fresh neapolitan sauce (one folk theory as to the origin of this sauce says cooks aboard Neapolitan ships invented it in the mid-16th century after Spaniards introduced the tomato (a New World fruit) to Europe, the other theory states this was a sauce prepared by the wives of Neapolitan sailors upon their return from sea.)

OK, back to business, firstly its been a long time between posts, I know, sorry about that but we've had a bit of island isolation (no internet), so now I will try and bring you all up to speed and catch up on where we've been and what we've been up to this past month and a half! 

The Bay Islands of Utila, Roatan and Guanaja were pleasant, with hippy Utila a favorite first and touristy Roatan a second runner up.  A couple of pics (below) from our activities should give one a feel for these islands.

    1. Happy to hear from you Stuart, thank you re the photo's. Both of my cameras broke :( and I have been using my iphone for the last few posts. Hoping to get a new camera here in Panama. We transit the Panama Canal today, all very exciting! Will be posting pics of transit soon, then on to Galapagos…. Regards Sascha

    2. I guess salt water/air eventually work on cameras, but iPhones obviously take great photos, too. Bet the canal transit will be fun and different. As we say here, keep it between the ditches (Southern for "stay safe"). Great to hear from you guys. Tell all hello.
